A Certified Specialty Coffee is coffee that the Specialty Coffee Association (SCA) classified as a cup with a rating of more than 80 points out of 100.
This score is delivered by a certified Q grader (taster), who analyzes whether the coffee meets the quality standards and has no perceptible defects such as vinegary, immature, verdigris (fungus), loose (not finished developing), crushed, bitten by insects, veined (weakness of the grain due to lack of nutrients), total black, among others.
